Enchiladas


6-8 large flour tortillas
1 can refried beans
1lb ground beef, cooked and drained
8ozs cheddar cheese, shredded
1 can enchilada sauce


Spread refried beans in center of each tortilla. Top with ground beef. Reserve about half of the cheese and top the ground beef with the remaining. Top cheese with some of the enchilada sauce. Roll tortillas and fold ends under. Place in a baking pan and bake in a 350 degree oven for about 15 minutes. Top enchiladas with remaining cheese and sauce; continue baking for an additional 5 minutes. Serve with Mexican Fried Rice.
