1 pint fresh strawberries
3/4 cup water
3 tablespoons cornstarch
1 cup sugar
1 teaspoon lemon juice
1 9-inch baked pie crust (Classic Crisco Crust)
1/2 pint whipping cream, whipped
Line the bottom of baked pie crust with half the strawberries, sliced in half. In a saucepan, bring to a boil the remaining strawberries and 3/4 cup water. Simmer for 3 to 4 minutes. Combine cornstarch and sugar and add to berries. Cook until mixture is clear, stirring constantly. Add lemon juice. Cool slightly and pour over berries in pie crust. Chill several hours. Top with whipped cream.
